Although the sandwich predates him, the spelling appears to have been influenced by his name.

By the way, regarding the discussion between Ingy and Fritz about afternoon/evening/Abend and so on, I just had another thought as to why "evening" may not be as well-defined here.  I generally say "good morning" and "good night," but in between it's often just "hi" or "hello."  That's me, anyway; not saying that's everyone else's usage.
